Important Points

Calves are selected for bull beef as young calves and they are not castrated. This is a very intensive system as the bulls must be ready for slaughter at 15 months, 19 months or 22 months depending on the system.

The normal calf to two year old beef system, which is the most common system of beef production on Irish beef farms, castrates the males as calves and the steers are then ready for slaughter in 24 months, maximising compensatory growth in the second grazing system. This system is not as intensive as bull beef; therefore, it is not as high a cost system.
